Thyme and Orange Choc Chip Cookies

About the Recipe

These cookes are especially delicious when shared with good company or enjoyed by yourself with your favourite cuppa, a comfy chair and a good book or a good view.

Ingredients

  • 3 tbsp finely chopped thyme (tbsp – tablespoon)

  • Zest of 1 orange

  • 3 tbsp olive oil

  • 2½ tbsp maple syrup (or honey)

  • 1 egg

  • 2 tsp vanilla extract (tsp – teaspoon)

  • 2 cups almond meal

  • ¼ tsp baking powder

  • â…“ cup dark choc chips

Directions

  1. Pre-heat oven to 175°C

  2. Combine all dry ingredients

  3. In a separate bowl combine all wet ingredients

  4. Mix wet and dry ingredient together

  5. Use approx. rbsp to scoop mixture and shape into a ball, place on baking tray and flatten

  6. Cook for 12-16 minutes – until golden

  7. Use all your restraint and let them cool
