About the Recipe
Here’s one of my favourite recipes – I hide them from my children in the back of the fridge and I tell my husband they’re full of healthy things so he leaves them alone!
Ingredients
2 cups rolled oats (not the instant kind)
1/2 cup raw nuts or seeds (slivered almonds, sunflower seeds, linseeds, sesame seeds, whatever is in the pantry)Â
1 tablespoon hemp powder or unflavoured protein powder
6 Medjool dates - pitted
6 - 8 pieces raw ginger (optional)
2 tablespoons raw cacao powder
4 – 6 tablespoons maple syrup
1/2 teaspoon ground cinnamon
10 grinds of Himalayan salt
dash of peppermint essence (optional)
3-5 tablespoons melted coconut oil
desiccated coconut for rolling
Directions
Place all ingredients, except for coconut oil and coconut, into a food processor and process until you get a uniform mixture (about 1 minute).
Add the melted coconut oil and process again to combine. The mixture should resemble a slightly sticky crumble. If it’s too crumbly, add a little more coconut oil.
Using the palm of your hand, roll small amounts of the mixture into a ball.
Roll the balls in desiccated coconut.
Place on a tray & refrigerate.
