About the Recipe

Here’s one of my favourite recipes – I hide them from my children in the back of the fridge and I tell my husband they’re full of healthy things so he leaves them alone!

Ingredients

  • 2 cups rolled oats (not the instant kind)

  • 1/2 cup raw nuts or seeds (slivered almonds, sunflower seeds, linseeds, sesame seeds, whatever is in the pantry)

  • 1 tablespoon hemp powder or unflavoured protein powder

  • 6 Medjool dates - pitted

  • 6 - 8 pieces raw ginger (optional)

  • 2 tablespoons raw cacao powder

  • 4 – 6 tablespoons maple syrup

  • 1/2 teaspoon ground cinnamon

  • 10 grinds of Himalayan salt

  • dash of peppermint essence (optional)

  • 3-5 tablespoons melted coconut oil

  • desiccated coconut for rolling

Directions

  1. Place all ingredients, except for coconut oil and coconut, into a food processor and process until you get a uniform mixture (about 1 minute).

  2. Add the melted coconut oil and process again to combine. The mixture should resemble a slightly sticky crumble. If it’s too crumbly, add a little more coconut oil.

  3. Using the palm of your hand, roll small amounts of the mixture into a ball.

  4. Roll the balls in desiccated coconut.

  5. Place on a tray & refrigerate.
