Buckwheat Piklets

About the Recipe

The kids (and big kids alike) will love them.

Ingredients

  • 2 tbsp coconut sugar

  • 2 tbsp chia seed

  • 4 tbsp water

  • 1½ cups milk, water or milk alternative (I use oat milk)

  • ½ tsp bi-carb soda

  • 2 cups buckwheat flour

  • 2 tsp baking powder

  • 2 tbsp melted butter or oil

Directions

  1. Mix chia seed and 4 tbsp  water and allow to soak for 5 minutes

  2. Dissolve bicarb soda in milk/milk alternative/water

  3. Mix buckwheat flour, baking powder and coconut sugar in a large bowl

  4. Add soaked chia mix alternatively with milk and bicarb mix

  5. Add melted butter or oil and briefly mix through

  6. Cook 2-3 tbsp of mix per pikelet in a well-oiled pan over medium heat, flipping when small bubbles appear on the surface. 

  7. Enjoy your pikelets with your favourite toppings such as berries, jam, maple syrup or just as is!


Notes

This egg free, gluten free, nut free pikelet recipe can easily be made dairy free and perfect for those with allergies and intolerances. The kids (and big kids alike) will love them.
