About the Recipe
The kids (and big kids alike) will love them.
Ingredients
2 tbsp coconut sugar
2 tbsp chia seed
4 tbsp water
1½ cups milk, water or milk alternative (I use oat milk)
½ tsp bi-carb soda
2 cups buckwheat flour
2 tsp baking powder
2 tbsp melted butter or oil
Directions
Mix chia seed and 4 tbsp water and allow to soak for 5 minutes
Dissolve bicarb soda in milk/milk alternative/water
Mix buckwheat flour, baking powder and coconut sugar in a large bowl
Add soaked chia mix alternatively with milk and bicarb mix
Add melted butter or oil and briefly mix through
Cook 2-3 tbsp of mix per pikelet in a well-oiled pan over medium heat, flipping when small bubbles appear on the surface.Â
Enjoy your pikelets with your favourite toppings such as berries, jam, maple syrup or just as is!
