Scrambled Tofu
This recipe is a quick and easy healthy alternative to scrambled eggs! I find it very filling but is also delicious with your favourite toast or rice cake.
You can add chilli in when sauteing onion and capsicum for a bit of spice.
You can also add avocado as another good fat for the meal.
Ingredients:

300gm Silken tofu
-
Half a red onion
-
Half a small green capsicum, diced
-
One medium tomato, diced
-
Half a teaspoon of mixed herbs

Salt and pepper
-
A quarter of lemon
-
One tablespoon of hummus
-
A handful of baby spinach
-
A teaspoon of grapeseed oil
Method:

Place oil in a frypan on a medium heat, once warm, add onion and capsicum cook until softened.

Add tofu, salt, pepper, mixed herbs and tomato and cook on a medium to high heat.

Plate tofu on top of baby spinach with a squeeze of lemon and serve with hummus
