Scrambled Tofu

This recipe is a quick and easy healthy alternative to scrambled eggs! I find it very filling but is also delicious with your favourite toast or rice cake.
You can add chilli in when sauteing onion and capsicum for a bit of spice.

You can also add avocado as another good fat for the meal.

 

Ingredients: 

  • 300gm Silken tofu

  • Half a red onion

  • Half a small green capsicum, diced

  • One medium tomato, diced

  • Half a teaspoon of mixed herbs

  • Salt and pepper

  • A quarter of lemon

  • One tablespoon of hummus

  • A handful of baby spinach

  • A teaspoon of grapeseed oil

 

Method: 

  1. Place oil in a frypan on a medium heat, once warm, add onion and capsicum cook until softened. 

  2. Add tofu, salt, pepper, mixed herbs and tomato and cook on a medium to high heat. 

  3. Plate tofu on top of baby spinach with a squeeze of lemon and serve with hummus
