Buckwheat Piklets

Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 12-15 pikelets

Ingredients

  • 2 TBSN coconut sugar

  • 2 TBSN chia seed

  • 4 TBSN water

  • 1 ½ cups milk, water or milk alternative (I use oat milk)

  • ½ tsp bi-carb soda

  • 2 cups buckwheat flour

  • 2 tsp baking powder

  • 2 TBSN  melted butter or oil

Directions

  1. Mix chia seed and 4 TBSN  water and allow to soak for 5 minutes

  2. Dissolve bi-carb soda in milk/milk alternative/water

  3. Mix buckwheat flour, baking powder and coconut sugar in a large bowl

  4. Add soaked chia mix alternatively with milk and bicarb mix

  5. Add melted butter or oil and briefly mix through

  6. Cook 2-3TBSP of mix per pikelet in a well-oiled pan over medium heat, flipping when small bubbles appear on the surface.

  7. Enjoy your pikelets with your favourite toppings such as berries, jam, maple syrup or just as is!
