Buckwheat Piklets
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 12-15 pikelets
Ingredients
-
2 TBSN coconut sugar
-
2 TBSN chia seed
-
4 TBSN water
-
1 ½ cups milk, water or milk alternative (I use oat milk)
-
½ tsp bi-carb soda
-
2 cups buckwheat flour
-
2 tsp baking powder
-
2 TBSN melted butter or oil
Directions
-
Mix chia seed and 4 TBSN water and allow to soak for 5 minutes
-
Dissolve bi-carb soda in milk/milk alternative/water
-
Mix buckwheat flour, baking powder and coconut sugar in a large bowl
-
Add soaked chia mix alternatively with milk and bicarb mix
-
Add melted butter or oil and briefly mix through
-
Cook 2-3TBSP of mix per pikelet in a well-oiled pan over medium heat, flipping when small bubbles appear on the surface.
-
Enjoy your pikelets with your favourite toppings such as berries, jam, maple syrup or just as is!
